Analysis principle
Melamine is a triazine nitrogen-containing heterocyclic organic compound used as a chemical raw material. It is primarily used in the production of melamine-formaldehyde resin, which is widely applied in wood processing, plastics, coatings, paper making, textiles, leather, electrical, pharmaceutical, and other industries. Currently, it is an important post-urea processing product. Due to its toxicity, it cannot be used in food processing or as a food additive. Long-term intake of melamine by animals can cause damage to the reproductive and urinary systems, lead to bladder and kidney stones, and further induce bladder cancer.
In the food industry, it is often necessary to determine the protein content of food. Due to the technical complexity of directly measuring protein, the Kjeldahl nitrogen determination method is commonly used, which indirectly estimates the protein content in food by measuring the content of nitrogen atoms. Since melamine contains more nitrogen atoms compared to protein, if it is intentionally added to food, it can create the illusion of a higher protein content in the food.
